Proper Baked Beans

  • 2cups Thompsons White Pea Beans 907g
  • 5 cups water
  • 1 med onion diced
  • 1/2 tbsp salt
  • 2 tsp cider vinegar
  • 1 tbsp brown sugar
  • 1 tbsp mustard (grainy dijon or whatever you have)
  • 1/4 cup fancy molasses
  • 1/2 cup ketchup
  • pinch black pepper
  • 1/2lb bacon

Soak beans overnight.

Boil beans in 5 cups water, simmer 30 minutes, drain

Layer in pot: onion, bacon, other ingredients. Add beans on top. Do not stir.

Add enough water to cover and bake in oven at 250 F for 7 hours.  After 5 hours you can stir the beans. Add water as necessary.
